As a working mom I am always looking for quick, easy, and tasty meal ideas. Cooking a meal at the end of the work day is near impossible. Between wrapping up work and taking the kids to their after school activities, the end is usually over before it begin. So I generally do my meal prep in the mornings before the sun its out.
I spend most weekday morning prepping dinner between before I even start my work day. This means that I am generally cooking dinner between 4am-6am. Yes, this is an exhausting start to the morning and the work day; however, it helps ensure that the family has a nutritious dinner ready to eat after a long day of work and school. The meal prep and planning has become especially important now that my growing kids are in extensive sports trainings, averaging 1 1/2 hours of training everyday!
One of my favorite go-to meals has been the masala chicken meatball recipe. Reminiscent of a kebab, these meatballs use ground meat mixed with fresh herbs, spices, and squeezes of lime juice. These meatballs are protein packed and every bite is filled with flavor. The meatballs can be cooked over the stove, on a grill, or in an oven. I generally bake them in the oven because it uses no grease and is convenient. The last thing I need at 5 in the morning is a grease splatted stove-top!
Plus these meatballs are versatile. The can be eaten with some form of flatbread, rice, or could even be added to a kale salad. My carb loving family usually gravitates toward the flatbread or rice or maybe even a combination of flatbread and rice. Topped with tomatoes, onions and either raita or tzatziki; these masala meatballs make a perfect weeknight meal.

Ingredients
- 1 pound of ground chicken
- 1 egg
- 1/4 cup chopped cilantro
- 1/4 cup breadcrumbs
- 1 medium shallot
- 3 cloves of garlic
- 1 inch piece of ginger
- 1 teaspoon turmeric
- 1 teaspoon coriander
- 1 teaspoon cumin
- 1 teaspoon garam masala
- 1/2 teaspoon Kashmiri chili powder
- 1 teaspoon salt
- 1/2 lime
Directions
Prep
- Pre-heat the oven to 375 degree Fahrenheit
- Foil and parchment a baking tray
Cook
- Grate shallots, ginger, and garlic.
- Finely chop cilantro
- Add grated and chopped mixture, egg, breadcrumbs, and masalas in a mixing bowl and mix well
- Add ground chicken and salt to the masala mixture and mix well until well incorporated
- Squeeze 1/2 lime on top of the ground meat and mix again
- Use a 3 tablespoon cookie scoop to scoop the meat onto the prepared pan
- Cook for 15 minutes and then rotate the meatballs then cook for an additional 15-20 min or until cooked through
Serve
- Serve with cumin rice or pita or naan. Top with raita or tzatziki
