Soy Baked Fish

This soy baked fish, made with a thicker white fish like cod or halibut, is a simple flavorful meal that melts in your mouth and leaves your wanting more. For me this meal allows me to travel back in time to my childhood when my mom would cook up new recipes using soy.

I grew in Hong Kong surrounded by soy noodles, soy chicken, soy dipping sauce – so many other soy infused eats. My mom knew how much I loved this salty fermented condiment, and she would try new soy marinades and soy sauced meals on a regular basis.

This soy baked fish recipe is a book out of her page – an improvised meal that has turned into a household staple. I have since made this meal on several occasions for my own family who have grown to love and associate this meal with comfort and love.

This fish dish is lush, relatively healthy, and absolutely delicious. The added garlic, shallots, and scallions that get roasted with the cod and the sauce all add a dimension of sweet, smokey, and buttery flavors to a salty and slightly spicy sauce. This is easy to prep, uses minimum ingredients, and cooks in no time!

Ingredients

  • 1.5 lbs of wild caught cod, cut in four even sized pieces
  • 1/4 cup of lite soy sauce
  • 1 tbsp rice wine vinegar
  • 1/8 tsp sugar
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • 1/2 tsp red chili flakes
  • 1 tbsp roasted garlic
  • 1 large shallot
  • 1 bunch of scallions
  • 1 tbsp sesame oil

Directions

Prep

  • Pour and mix the soy sauce, rice wine vinegar, sugar, garlic powder, ginger powder, and red chili flakes and set aside
  • Julienne the shallots and cut the scallions into long strips
  • Wash the cod and pat it dry
  • Place the cod on a foiled baking sheet
  • Smear 1/4 tsp roasted garlic on top of each piece of cod
  • Place the shallots and scallions under the cod, on top of the cod and between the cod
  • Pour the sauce evenly across the pieces of cod
  • Place the baking sheet in the fridge for 20-30 min
  • Pre-heat the oven to 400 °F

 Cook

  • Place the prepped cod in the pre-heated oven for 15 min until firm and flaky with an internal temperature of 140°F

 Serve

  • Serve the cod on a bed of white rice, garnish with the roasted shallots and scallions and top with a 1/2 tsp sesame oil per slice of cod
